Simple oven-roasted almonds – sweet & salty

Weigh out the almonds and place them in a bowl. Pour the raw cane sugar and water onto the BORA universal tray and spread them out evenly. Preheat the BORA X BO (170°C/-100% humidity) then caramelise the sugar and water mixture in the oven for 10 minutes. Remove the tray from the oven, add the almonds and stir well with a spoon. Bake the almonds for 15 minutes. Remove the tray from the oven, season with salt and chilli powder to taste, then mix well again. The chilli powder can also be substituted with paprika or curry powder, for example.
