Make the dumpling dough
Melt the butter in a small pan. Add the melted butter to your food processor’s mixing bowl together with the flour, semolina, egg yolks, curd cheese, sugar and a pinch of salt and knead into a smooth dough. Leave the dough to rise in the fridge for 30 minutes.
Shape the dumplings
Wash and dry the apricots, cut them in half and remove the stones. Divide the dough into four equal-sized pieces. Flatten the dough pieces with floured hands, put one apricot on each piece then fold over the dough and shape into dumplings.
Steam the dumplings
Line the perforated tray with the baking mat, place the apricot dumplings on top and steam in the X BO (98°C/100% humidity, automatic programme “Apricot dumplings”) for 20 minutes. In the meantime, melt the butter in a pan, add the sugar and breadcrumbs and leave to caramelise.
Finishing touches
Remove the dumplings from the X BO, roll them in the breadcrumbs while still warm and serve immediately.
Pro tip
To take the sour edge off the fruit and make it a bit sweeter, remove the stone from each apricot and replace with a sugar cube.

- 60 g semolina
- 2 egg yolks (size M)
- 250 g curd cheese
- 50 g sugar
- Salt
- 4 apricots
