Tuna sashimi with lotus root

Marinate the fish in the ingredients. Fry the lotus root slices in a little toasted sesame oil until golden brown and crispy, then add to the fish. Sprinkle on the garlic flowers and season with salt and pepper to taste.

  • 300 g tuna (sushi quality)
  • 8 slices of lotus root
  • 2 tbsp soy sauce
  • 2 tbsp sake
  • 2 tbsp mirin
  • 1 tbsp sesame seeds
  • 2 spring onions (sliced)
  • 1 red chilli
  • (finely chopped)
  • 2 tbsp lime juice
  • 1 tsp matcha
  • 4 garlic flowers
  • 1 tsp toasted sesame oil
