Sear the meat, make a marinade out of the remaining ingredients then stir into the meat. Season with salt and pepper to taste.

  • 1 mango (diced)
  • 1 small red chilli pepper
  • (finely chopped)
  • ½ bunch of coriander
  • (chopped)
  • 3 lime leaves (finely chopped)
  • 3 black horehound stems (plucked)
  • 3 Thai basil stems (plucked)
  • 2 tsp brown sugar
  • 1 lemongrass stem (finely sliced)
  • 4 tbsp lime juice
  • 1 tbsp fish sauce
  • 1 tbsp soy sauce
  • 2 tbsp mirin
