Sear the meat, make a marinade out of the remaining ingredients then stir into the meat. Season with salt and pepper to taste.
- 400 g beef fillet (cut into thin strips)
- 1 mango (diced)
- 1 small red chilli pepper
- (finely chopped)
- ½ bunch of coriander
- (chopped)
- 3 lime leaves (finely chopped)
- 3 black horehound stems (plucked)
- 3 Thai basil stems (plucked)
- 2 tsp brown sugar
- 1 lemongrass stem (finely sliced)
- 4 tbsp lime juice
- 1 tbsp fish sauce
- 1 tbsp soy sauce
- 2 tbsp mirin
