Salmon and sesame sashimi with a pea and wasabi purée

Press the salmon into the sesame seeds and fry on all sides for 15 seconds. Blanch the peas, add the coconut milk, wasabi, coriander root and soy sauce, season to taste then blend to a coarse consistency using a hand-held blender.
- 500 g salmon
- 4 tbsp sesame seeds, white and black
- 600 g peas
- 1 tin of coconut milk
- 1 pinch wasabi
- 1 tbsp soy sauce
- 5 coriander roots/stems (finely chopped)
- 2 tbsp groundnut oil
