Melon Gazpacho

Preparation

Prepare the ingredients

Remove the crust from the white bread and cut the rest into large pieces. Peel cucumber and watermelon, then remove the core and pips and cut both into large pieces. Wash and quarter the peppers and remove the stalk bases, white ribs and seeds. Wash the celery as well and cut into large pieces along with the pepper.

 

Prepare gazpacho

Mix all ingredients in a bowl and store for 24 hrs in the fridge. Then blend in the mixer for approx. 5 to 10 min and pass through a fine sieve. Garnish to taste and serve in a deep dish or a glass.

Preparation: 25 min.
Resting time: 24 hrs

Ingredients for 5 portions:

  • 1 cucumber
  • 1 kg watermelon (skinned)
  • ¼ red peppers
  • 1 celery stalk
  • 100 ml olive oil
  • 100 g white bread (tramezzini)
  • 50 ml red wine vinegar
  • ½ lemongrass stick
  • ginger
  • 1 pinch of cumin
  • ½ tsp Tabasco
