Hummus with quick pita bread
Preparation
Knead the pita dough
To make the pita bread, mix together the flour, baking powder and salt, then add the soft butter and water and knead into a firm dough. The dough shouldn’t be too sticky.
Shape the bread
Shape the dough into a roll then divide it into eight pieces. Roll out each piece, or flatten them between two small boards. Heat up 2 tbsp olive oil in a large frying pan and fry the pita bread over a medium heat for 3-4 minutes until golden brown.
Blend the hummus
Set aside four chickpeas. Put the remaining ingredients into a blender and blend until smooth. Garnish the hummus with some cayenne pepper, the remaining whole chickpeas and some olive oil.
Tip: this recipe makes a large portion of hummus. If you have any left over, you can always eat it the next day.
Ingredients for 2 portions:
- 170 g wheat flour (type 405)
- ½ tsp baking powder
- ½ tsp salt
- 1 tsp butter (room temperature)
- 100 ml warm water
- 2 tbsp olive oil
- 250 g chickpeas
- 50 ml chickpea water
- 2 garlic cloves
- 2 tbsp lemon juice
- 3 tbsp tahini (sesame paste)
- 1 tsp salt
- ½ tsp cayenne pepper
- 1 tsp cumin
- 2 tbsp olive oil
Additional items
- 2 tbsp olive oil to garnish
