BORA Tepan – take indoor barbecuing to the next level
Perfect heat distribution, evenly cooked food and wonderfully flavoursome results – with the BORA Tepan stainless steel grill meat, fish, vegetables and even desserts become truly mouthwatering. The Tepan is one of the cooktops that can be individually selected for the BORA Professional 3.0 and BORA Classic 2.0 cooktop extractor systems.
Inspired by the teppanyaki grill used in Japanese cuisine, the BORA Tepan features two grilling zones under a single stainless steel plate, which can be separately controlled and set to precise temperatures of between 70 and 250°C. The bridging function also makes it possible to connect the two zones together to create a large cooking area measuring 465 x 295 cm.
It takes the Tepan less than five minutes to heat up to 250°C. Once the desired temperature has been reached, the Tepan automatically regulates the energy supply and keeps the temperature constant even if the ambient conditions change – enabling cold food to be added to the plate for grilling without a second thought. Thanks to the sensors in the Tepan, the heat loss is instantly combated so the food is evenly cooked on all sides. The Tepan’s temperatures are precisely displayed in degrees Celsius on the BORA Professional’s control knob and on the basis of temperature levels on the BORA Classic’s operating panel.
Little oil is needed on the BORA Tepan when cooking meat, fish or vegetables. The optimum cooking temperature ensures that food is cooked particularly gently, preserving the majority of vitamins and nutrients. Even food that should be cooked at low temperatures, such as fish, can be prepared on the Tepan by setting this to between 80 and 90°C.

How to clean the Tepan
Preliminary cleaning:
One of the major advantages of the Tepan is its simple cleaning. This can be done quickly, easily and without any chemicals. The surface should first be left to cool to a temperature of 70°C or conversely heated to 70°C using the cleaning function (level C). Always leave the extraction function running when doing this. Food residues and excess oil can then be carefully removed with kitchen roll. Any burned-on residues should be briefly soaked in water and then scraped off with the Tepan spatula. The area can then be wiped with a sponge cloth or kitchen roll.
Secondary cleaning:
A clean scouring sponge is ideal for the secondary stage of cleaning the Tepan. Simply place the rough side of the sponge on the Tepan, press on it with the Tepan spatula and move it back and forth across the stainless steel plate in the direction of the grain. The loosened residues can then be wiped off.
If any dirt remains, applying lemon juice, diluted vinegar or diluted citric acid to the Tepan can help to remove this. Simply squeeze a generous squirt onto the cooktop and remove the remaining burned-on residues with a sponge and the Tepan spatula.
As a last step, simply wipe the Tepan stainless steel grill with a clean, damp cloth. It’s now ready to use again for your next extraordinary cooking experience.
Because making food on the Tepan is so much fun, it gets a lot of use. Signs of this are completely normal; they are like a patina that makes the Tepan unique over time.
BORA tip: do not clean the Tepan stainless steel grill with metal scourers or stainless steel wool as these would unnecessarily scratch its surface.
