MARINADE
To make the marinade, peel and finely chop the garlic clove and stir it into the other ingredients.
MEAT
Slice the meat as thinly as possible. Then mix it with the marinade, place it in a vacuum bag or an airtight container and leave to marinate in the fridge for 4-8 hours. Remove the marinated meat from the bag/container and pat it dry thoroughly. Spread out the meat strips on the universal tray and dry them in the X BO (50°C, special programme “Dehydrate”) for around 3-4 hours.
PRO TIP
This dried meat can be prepared in advance. It keeps best if it is vacuum-sealed once it has cooled down. The BORA QVac built-in vacuum-sealer is ideal for marinating – simply put the meat and the marinade into the vacuum container and marinate in just 10 minutes.

- 1 garlic clove
- 100 ml dark soy sauce
- 50 ml apple vinegar
- 2 tsp honey (or agave syrup)
- 1 tsp Dijon mustard
- ground pepper
