Udon noodle salad

Preparation
Cook the rice noodles. Sear the mince and garlic then briefly add the shrimps. Chop the spring onions and coriander. Make a marinade out of the remaining ingredients and mix everything together. Sprinkle with chopped peanuts and season to taste.
- 200 g udon noodles
- 150 g mince
- 100 g shrimps
- 4 spring onions
- 1 red chilli pepper (finely chopped)
- 6 cocktail tomatoes (quartered)
- 4 tbsp lime juice
- 1 garlic clove (finely chopped)
- 2 mint stems
- 1 tbsp soy sauce
- 1 small bunch of coriander (finely chopped)
- 2 tsp sesame oil
- 1 tbsp fish sauce
- 1 tbsp brown sugar
- 50 g peanuts (coarsely chopped)
